Butter chicken is a creamy, aromatic Indian curry made with tender chicken pieces simmered in a rich tomato-based sauce infused with spices and enriched with butter and cream.
Add onions and allow to soften on a low heat for a few minutes
Add ginger & garlic and saute for 2 mins on low
Add butter chicken masala & mix well
Add remainder of gravy ingredients and simmer for 30m+ until all the ingredients are soft.
Remove from stove and let cool
Blend in a blender until smooth
Strain through a strainer to result in a velvet smooth magic gravy
To assemble
Add the butter and sunflower oil into a deep pan or shallow pot
Add ginger and saute on low-medium until colour only just starts to form
Add Kashmiri Chilli Powder & mix well
Add the Magic Butter Chicken Gravy, mix and bring to a simmer
Add the Cooked Chicken Tikka Pieces, simmer until heated through
Add the honey, check for salt
Add 1st Tablespoon Fresh Cream and stir in
Plate immediately
Plate & Garnish
Divide into 5 portions (your choice)
Drizzle with fresh cream
Sprinkle very lightly with fresh dhania / coriander

Whilst this recipe is designed to be cooked using pre-cooked chicken tikka pieces, there is nothing stopping you from marinating the chicken pieces in some lemon juice and our all-in-one tikka masala, roasting in the oven until they start to get some char (only just) and using instead of the charcoal grilled tikka, made with an authentic tikka paste (recipe & video )Lastly, if you are really pushed for time and want a quick and easy way to cook butter chicken, then try THIS RECIPE, just leave out all the different spices and only use the all-in-one Butter Chicken Masala.Here is a video that our Spicemaster sent to me, when he was teaching me how to make the Butter Chicken Gravy, the ingredients have been slightly adjusted, such as a little less garlic, garam masala now blended into the masala, but you will get the drift.
